Duties & Responsibilities

  • Regular Duties
    – Checking & Reporting
    + Daily Delivery Documents against Purchase Orders / Purchase Requisitions.
    + Check Store Requisition Forms & Inter Kitchen / Bar Transfers.
    – Provide Daily Food / Beverage Cost Reports.
    – Ensure FSMS compliance at Receiving and Store.
    – Check accuracy and analysis Daily Food & Beverage Cost Reports, and investigate variances
  • Control and Spot Check
    – Perform Market Survey with Purchasing and Kitchen, before evaluation of quotations obtained by Purchasing
    – Do Food Tests (Portion, Yield, Blind, Buffet, Butcher) and Beverage Spot Checks, and variance investigate.
    – Match Captain Orders with Guest Checks, and investigate variances.
  • Month End Duties
    – Perform month end inventory at Stores and Outlets. Reconcile to Inventory System.
    – Assist Finance Manager in preparation of Monthly Closing and Reports.
    – Verify accuracy and analyze Monthly Food & Beverage Cost Reports, and investigate variances.
    – Prepare and analyze F&B Cost Controllers Report, as per group guideline guidelines.
  • Ad Hoc
    – Update information in system such as: new Inventory Codes, Inventory Par Levels, and Recipe Costing.
    – Verify accuracy of Selling Prices in Point of Sales Systems.
    – Prepare and follow-up on Receiving / Store Management Reports.
    – Other tasks will be assigned by Director

Qualification & Requirements

  • Bachelor’s degree in finance or relevant field strongly preferred
  • Minimum 4 years’ experience working in cost control
  • Management experience strongly preferred
  • Exceptionally well organized with an aptitude for data
  • Outstanding communication skills, both written and verbal
  • Solid networking and interpersonal skills
  • Able to generate budgets and reports
  • Strong presentation skills, able to explain concepts concisely and accurately
  • Able to develop strong, cooperative relationships with department heads
  • Creative thinking skills and ability to solve problems
